Baby and Pregnancy friendly!! You can have this on the table in under 30 minutes
INGREDIENTS:
1 pound salmon
2 tablespoons Dijon
1 tablespoon soy sauce
1 tablespoon sriracha (can omit on baby's salmon; L doesn't mind spice so I leave it)
1 cup white rice
2 cups chicken broth optional for cooking the rice in (Can use water instead, but doesn't taste as good)
1 jalapeño, sliced
1/2 red onion, sliced
scallions, chopped (can also use chives, whatever you have)
fresh cilantro
sesame seeds
rice seasoning
Ginger
Wasabi
Avocado if you have it
What to do :
preheat oven on the broiler setting to high
prepare rice according to package instructions. You can use chicken bone broth like I did or just use water as your liquid. I always use chicken broth and add butter to my rice
cube raw salmon, doesn't have to be pretty or even, just chop it up
in a large bowl (big enough go add salmon) add dijon, soy sauce and sriracha and mix
add salmon to this mixture and stir to coat evenly. add salmon to a lined cookie sheet
add jalapeños, onion and scallions to the same cookie sheet
 put salmon and jalapeños, onions and scallions in the oven for about 3-4 minutes, (during this time I get my rice on the plate, topped with rice seasoning) check and if the veggies are browned, pull the veggies off and then to the plate with the rice; keep salmon on; add salmon back to oven for another 3-4 minutes, once salmon looks browned and crispy but not burnt pull off and add to the plate
top with sesame seeds and fresh cilantro, serve with ginger and wasabi on the side, and avocado if you have it
